The calzone is an Italian dish. It is a folded, oven-baked pizza. It is mainly originated in Naples in the 18th century. A soft dough makes the base of the calzone and baked in the oven. It is presented with stuffed salami, eggs some vegetables and ham, also stuffed with lots of cheese like mozzarella, ricotta, parmesan, and pecorino cheese. We can also add other toppings and can customize our pizza according to our choice and taste. Moreover, the variations of toppings may include tomatoes, jalapeno, olives, onions, capsicums, minced meat, fish, cabbage, etc.
How the Calzone is made?
The same pizza factory also makes the Calzone. A very soft dough is the secret ingredient to make perfect calzone. They knead this dough with water, salt, oil, and the most important ingredient yeast. They then keep it for 2 to 3 hours wrapped in the damp towel until the dough it raises the dough and the yeast did its job. As the dough gets ready to mold it in proper shape, they then roll it into the small, medium- or large-sized CDS. Then, they stuff the topping of your choice and the brilliant combination of mozzarella and ricotta cheeses in the half-sized disc. Lastly, they fold the other half and seal it with egg mixture.

In Italy they bake the sandwich-sized calzones and serve at Italian food counters or street vendors as you can eat it anywhere, standing or walking. But in restaurants, you can find amazing versions of calzones. Like, in Apulia they deep fry the calzones and stuff them with tomatoes and mozzarella. And, they call them Lanzerotti.
