Italian Wedding Soup Recipe

8 oz  ground beef

8 oz ground pork

1/2 cup white bread crumbs

1/4 cup fresh parsley, chopped

1 1/2 tsp fresh oregano, minced

1/2 cup parmesan, shredded

1 egg

Salt and black pepper powder

1 Tbsp olive oil


1 Tbsp olive oil

1 1/4 cups, carrots, diced

1 1/4 cups yellow onion, diced

3/4 cup, celery, celery

4 cloves garlic, minced

5 cans chicken broth

1 cup pasta

6 oz spinach, chopped

Parmesan, shredded for serving.


For the meatballs:

Add the ground beef and pork in a large bowl. Add the parsley, bread crumbs, egg, parmesan, oregano, salt and pepper as per taste and mix well.

Toss the mixture and break it up with hands to evenly coat and distribute the meat pieces. Take small portions of the mixture and shape into meatballs of around ¾ inches and place them in a big plate.

Take olive oil in a large wok and keep the flame medium-high. Add half of the meatballs and cook them until they are browned. Turn and toss them occasionally to evenly brown them from all sides.

Transfer these into a plate lined with paper towels and let the oil remain in the wok. Repeat this with all the meatballs, until all are cooked. Keep in mind that the meatballs are not entirely cooked with this process and they are only evenly browned. These will continue to cook later in the soup.

For the Soup

Take 1 tbsp olive oil in another wok and keep the flame medium-high. Add the diced vegetables and saute until they have softened. Add garlic and again saute for some time.

Add the chicken broth, salt and pepper and let the mixture boil.

Add the pasta and meatballs and reduce the heat to simmer.

Cover and cook the soup for 10 minutes until the pasta is cooked and the meatballs have cooked from within. Add spinach in the end.

Serve warm and sprinkle with parmesan cheese for garnish.

Tips For Making The Best Recipe For Italian Wedding Soup

Searing the meatballs is not a very common trick. But searing them adds a delicate roasted flavor to them and gives an added flavor to the broth.

Do not make large sized meat balls. This is a soup and all the vegetables and meatballs should be small and bite-sized.
